Grilled Fish Tacos!

I love fish Tacos! They are easy and delicious…really what else do I need to say!! I don’t remember where I got this recipe from…my mom probably, she always makes the best fish related things, since that’s all my dad eats!

Grilled Fish Tacos

Fish (adabo):

  • 4 tsp chili powder
  • 2 Tbs lime juice
  • 2 Tbs olive oil
  • 1 tsp ground cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 2 lbs Mahi-Mahi or Halibut

Combine chili powder, lime juice, olive oil, cumin, onion powder, garlic powder, salt and pepper. Rub abado on fish – let marinate 20-30 minutes

Coleslaw:

  • 1/4 cup light sour cream
  • 1/4 cup light mayo
  • 2 Tbs cilantro
  • 1 tsp lime zest
  • 2 Tbs lime juice
  • 1 tsp sugar
  • 1/8 tsp salt
  • pepper TT (to taste)
  • 3 cups shredded cabbage
  • 12 corn tortillas

Combine sour cream, mayo, cilantro, lime zest, lime juice, sugar, salt and pepper. Mix until smooth. Add cabbage and toss. Refrigerate.

Grill fish and the separate into chunks. Warm corn tortillas on the grill. Layer to tacos tortilla, cheese (optional), coleslaw, and fish! ENJOY!

Grilled peaches!! Just cut the peaches in half and grill…sooo good!
